I have an old K&B 61. I purchased new head gaskets and promptly blew the 1st one out. They are just o-rings, my question is have tight should the head screws be? I am running 25% Nitro could this be the problem, should I use a low %Nitro? :D

K&B 61's never used an o-ring for a head gasket. The SPORTSTER .65 did when it first came out and later it was elimated. Did you purchase the o-rings from us, K&B? They are a special high temperture material. A regular o-ring will not work.
Now they are just a metal to metal fit.

Yes I did purchase the O-ring from K&B, If I do use the O-ring how tight should the head bolts be? Also should I use a low % nitro gas like a 10%?
